Cakounet, a decadent, moist & rich chocolate cake



This recipe is from Philippe Conticini, a famous french patissier but isn't technical in the slightest way, even the though the result is so good; a super-rich moist chocolate cake with a gooey centre. One of the best loaf chocolate cakes I have ever eaten and is so quick to whip up. This is the perfect recipe for an afternoon tea that you don't want to take too long to make but will still be really enjoyed.



Ingredients:

  • 150 g dark chocolate

  • 75 g milk chocolate

  • 80 g demerara sugar or other less-refined sugars compared to caster sugar

  • 90 g plain flour

  • 3 eggs

  • 1 teaspoon of salt

  • 1 teaspoon of vanilla extract



Recipe:

  1. Preheat the oven to 170°C and grease a loaf tin with butter.

  2. Melt the chocolates and butter in a saucepan and then leave to cool.

  3. Beat the eggs with the sugar + salt until pale.

  4. Add in the sifted plain flour and mix until combined.

  5. Add in the melted chocolates and mix one last time before pouring into the prepared tin and baking for 25-30 minutes, depending on how cooked you like the centre to be.

  6. Leave to cool on a rack before taking out of its mould and serving with a dusting of icing sugar.
