The Fluffiest Pancakes



These pancakes are a highlight to my weekend and I really enjoy having them the days where I have more time to make breakfast. They are perfect for lazy weekends with cozy sli


Achieving the fluffiest pancakes is really easy and you will achieve them every time if you follow these tips:

  • Use baking powder and bicarbonate of soda.                                         

  • Use buttermilk, if you don’t have any add lemon juice or vinegar to milk and leave for 15-20 mins, the milk will start to curdle. I actually prefer the pancakes when I make them with the homemade buttermilk but if you are in a hurry, grab the store-bought kind.                                           

  • Barely mix at the last mixing stage.                           

  • For me a feature of a bad pancake is when the pancake tastes oily, to prevent this, grease the pan with butter and spread everywhere with a silicone baking brush (if you use a brush with hair, the hairs will burn). 

  • Make sure your pan is super hot before ladling on your batter



Ingredients:

For 15 large pancakes

  • 300 grams plain flour

  • 2 teaspoons baking powder

  • 1 teaspoon bicarbonate of soda

  • 1/2 teaspoon kosher or table salt

  • 4 tablespoons golden caster sugar or white sugar (but I prefer the little taste of caramel taste you get with golden caster sugar.)

  • 300 ml of buttermilk (300 ml of milk + 2 and 1/2 tablespoons white wine vinegar/lemon juice)

  • 1 teaspoon of vanilla extract

  • 4 eggs, separated

  • butter to grease the pan

  • Toppings for your pancake



Instructions:

  1. (Optional)Make your buttermilk: Mix the vinegar + milk in a bowl and set aside for 15-20 minutes.

  2. Sift all your dry ingredients into a bowl and mix until combined.               

  3. Put all your wet ingredients (buttermilk, vanilla extract and egg yolks, sugar)into a separate bowl and whisk to combine.                  

  4. Mix the wet ingredients with the dry with a spatula for 30 seconds until just combined (it's fine if there are still pockets of flour in your batter).      

  5. Whisk your egg whites until stiff peaks form.

  6. Fold your egg whites into the batter.

  7. Place your pan on medium heat.

  8. Grease a large pan with butter and brush around with a pastry brush.

  9. Leave the melted butter in the pan for 1 min so that it’s burning hot 

  10. Add a ladle of the batter and cook.                               

  11. You can flip the pancakes once you see little bubble on the pancakes.     

  12. Cook for a 1 min and serve with your favorite toppings.




Toppings idea: Summer Berries Syrup, (the recipe is on the blog) it is so delicious with these pancakes, a little granola and a dollop of Greek yogurt.
