Crispiest potato cube - course 4/7

Another viral tiktok recipe I really wanted to try out, I got the recipe from "poppycooks".


Note: The recipe has to be started the day before!



Ingredients

  • 750g white potatoes such as Maris Pipers

  • 1/2 tbsp sea salt

  • Pepper

  • 1 large clove of garlic, chopped finely into a paste

  • optional: thyme

  • 100g melted beef dripping

  • oil for deep frying



Recipe

  1. Pre-heat the oven to 130C.

  2. Peel and slice the potatoes, using a mandoline, or making sure to slice them very thinly.

  3. Melt the beef dripping, add in the salt and pour over the potato slices. Mix.

  4. Layer the potato slices in a loaf tin lined with parchment paper. You might need to remelt in the microwave the beef dripping and the potatoes as it does set. Sprinkle with sea salt flakes, garlic and dried thyme as you go.

  5. place a layer of parchment paper over and bake for 3 hours or until tender.

  6. Add some weight on top to compress the potatoes and place in the fridge for 10-12hours.

  7. Once set, cut into cubes and fry in oil at 195C until golden.

  8. Serve with a sprinkle of sea salt flakes.
