These waffles are so crispy but soft in the centre and with the crispy sugar pearls to add on, these waffles are perfect for a desert or a snack.
Liège waffles are heavier than normal waffles and their mane characteristic is to have pearled sugar in them. Because they are heavier than regular Belgian waffles, I think that they are more a dessert/snack than a breakfast but if you don't mind something heavy and sweet in the morning, then go try them out for breakfast. Another difference between Liège waffles and Belgian waffles is that Liège waffles are rounder and have rounded edges. They are commonly eaten as an afternoon snack in Belgium and are usually not eaten with any topping, the sugar pearls and the delicious taste of the waffle itself is so yummy, nothing else is needed.

Ingredients:
200 grams of flour
pinch of salt
80 grams of caster sugar
90 ml of warm milk
1 teaspoon of dry active yeast
1 egg
125 grams of partly melted in the microwave (so super soft) butter
1 teaspoon of vanilla
100 grams of pearled sugar
Recipe:
Place the flour + caster sugar + salt in a bowl and mix. Make a well in the centre.
Pour the warm milk in the well and then sprinkle the yeast on top of the milk. DO NOT MIX, leave for 1 minute to let the yeast activate.
Once you have waited a minute, crack in the egg + the super soft butter + pearled sugar and mix with a whisk, starting by only mixing in small circles and then making the circles bigger to ensure to not have any lumps.
Cover the bowl in clingfilm + a tea towel and leave the dough to rise in a warm place overnight or at least 2 hours.
Heat your waffle iron and then grease it with a little bit of butter, making sure the waffle iron is greased everywhere.
Take little balls of dough and place them on the super-hot waffle iron and leave to cook for 2 minutes or until golden.
Take the waffles off the waffle iron (they are going to be very flimsy so be careful) and leave to cool on a wire rack for 30 seconds, to make them go crispy and hard.
That's it!!!
