Summer Fruits Syrup

Mid-way between a syrup and a jelly when it cools, this delicious add-on is so fresh and delicious. It has the right balance of sweetness to just add that little something extra to what you choose to add it onto.


It's so quick & simple to make and is only made out of 4 ingredients:

  • Frozen or fresh summer berries

  • sugar

  • cornflour

  • water

You don't need to make it with summer berries, you could just use strawberries or leave the blueberries out or make it only with raspberries and blackberries. It is completely to you to choose.


Also this recipe can easily be doubled or tripled because quite frankly, it usually disappears in the hour it's been made but you could make a big batch and store it in the fridge and have it on your porridge for example every morning for a nice treat early in the morning.


Like I said, this berry treacle is so versatile, you could use it on:

  • Waffles

  • Ice cream Sundays

  • Your morning Porridge

  • As a jam on bread

  • On scones

  • crumpets

  • In a yogurt parfait

  • On pancakes -> find the recipe for these super fluffy, moist and full-on scrumptious pancakes on the blog or here (they are honestly the most delicious pancakes ever so definitely go try them out!!!).

  • The list of ideas goes on and on but I think I have definitely proved my point; this delicious syrup can go anywhere and will make that dish 50% more tasty, I guarantee it.

Ingredients:

  • 1 cup of fresh/frozen berries of choice

  • 2 tablespoons of caster sugar

  • 1 tablespoon of cornflour

  • 1 tablespoon of water + extra

Instructions:

  1. Place your berries + sugar in a saucepan on low heat and simmer for a minute.

  2. Meanwhile, mix your cornflour with 1 tablespoon of water to make a liquidy opaque paste.

  3. Add your cornflour paste onto your berries.

  4. Add a little water at a time to make sure your berries don't stick to the saucepan and to get a nice consistency (If your berries are frozen, you are going to need more water than if they are fresh because your berries will take more time to cook).

  5. Once your berries are completely cooked through (this will take 3-6 minutes) and mushy in the center, mix well with a spatula or wooden spoon, pressing down on the berries to mash them up a bit (do this as much as you want).

  6. Your berry syrup is ready to be enjoyed.
