Gooey & intense, these brownies are super moist. Most people will agree they not as rich and dark as non-vegan brownies but they're a great alternative.
They are probably so gooey and moist because they are vegan so if really moist desserts aren't really your thing, these aren't for you.
The sweet potatoes really add to the softness of the brownie but also count as natural sugar in them so you don't need to add as much sugar.
You might have heard that the water from a tin of chickpeas can replace eggs. This works really well but I have tried whisking them up like I have seen others do and this has never worked for me.
Ingredients:
500 grams of sweet potatoes (about 2 large ones but weigh them to make sure), peeled and cut into small chunks
100 grams of oats
100 grams of plain flour
pinch of salt
1 teaspoon of baking powder
1 teaspoon of baking soda
150 grams light brown sugar
2 tablespoons of nut butter
3 tablespoons of coconut oil, melted
5 tablespoons of raw cacao powder
the water from 1 tin of chickpeas
100 grams of dark vegan chocolate
+ optional:some small chunks
Instructions:
Cook your sweet potatoes in boiling water until tender, this will take 15-20 minutes.
Place your oats + flour + baking powder + baking soda + salt in a food processor and blitz until the porridge oats have turned to powder.
Take out of the food processor and set aside.
Pre-heat the oven to 180°C and grease + line a square tin with baking parchment.
Drain the cooked sweet potatoes and place in a food processor.
Blitz until it resembles a smooth purée and then add in the flours + the nut butter + the water from a chickpea tin.
In a bain marie (double boiler), melt the coconut butter + chocolate and add in the cacao powder.
Mix well until all is completely melted and combined and add it to the food processor.
Blitz until all is combined and place in the prepared tin.
Optional: Cut some chocolate into chunks and place over the batter.
Cook in the oven for 45-50 minutes and then let cool in baking tin.
Your vegan chocolate brownies are ready to be enjoyed!
