Brownie Chocolate chip Cookies



Super indulgent and rich cookies, with a crisp outside and gooey centre.


These cookies can be made in 15 minutes, frozen to when you need them and then baked in 15 minutes! You can make the dough, form balls and place in the freezer for up to a month, so the perfect fix when you want to bake up some cookies in 15 minutes!

Ingredients:

  • 160 g cold butter

  • 100 g caster sugar

  • 100 g brown sugar

  • 200 g dark chocolate, chopped

  • 150 g self-raising flour

  • 130 g plain flour

  • 45 g cocoa powder

  • 1/2 teaspoon of salt

  • 1/4 teaspoon bicarb

  • 2 small teaspoons of baking powder

  • 2 eggs

  • Optional, white chocolate chunks on the top



Recipe

  1. Combine the butter + caster sugar + brown sugar + salt, do not cream. Then add in 1 egg + the self-raising flour and mix until combined.

  2. Add in the second egg and sift in the plain flour + cocoa powder + bicarb + baking powder and mix until combined and then add in the chopped chocolate and mix a final time.

  3. Divide the mixture into twelve balls and place in one baking tray lined with a silpat to freeze for 1 hour - 2 hours.

  4. Preheat the oven to 180 C with 2 baking trays in the oven to heat up.

  5. Once the oven is preheated, take out the baking trays and place on 2 silpats, or 2 sheets of baking parchment and the frozen dough balls and place immediately back in the oven for 5 minutes.

  6. After 5 minutes, if the cookies haven't spread enough, gently flatten them with a spoon and add on top the white chocolate chunks if wanted. Bake for a further 8 minutes at 160 C and then take out of the oven and leave to cool, they will look raw in the centre, but they will harden.
