Salmon and crispy rice cubes - 2/7 course meal




This recipe went viral on tiktok at one point and I found them very elegant and they looked delicious, so I gave them a go. I like small intricate dishes that can be eaten in 1-3 mouthfuls!




Ingredients

  • 1/2 cup Sushi/short grain rice

  • 1 tbsp rice vinegar

  • 1 fillet of salmon, chopped into small cubes

  • 2 tsp mayonnaise

  • 1 tsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp sriracha

  • 1 spring onion, chopped

  • black sesame seeds to garnish

  • optional: nori seaweed or lumpfish caviar + spring onions to garnish



Recipe

  1. Cook rice to package instructions, drain the water and add the vinegar. It should be sticky.

  2. Cool it down on a mat or parchment paper. Place another sheet of parchment paper on top, and flatten with a rolling pin to have a compact and thin (1-1.5cm high) layer of sticky rice. Chill to harden.

  3. Mix the mayonnaise + soy sauce + sesame oil + sriracha + chopped spring onion + cubed salmon in a bowl. Reserve in the fridge until needed.

  4. Cut into small squares of rectangles.

  5. Shallow-fry in hot oil in a pan. Flip. Once golden on both sides, remove and place on kitchen paper towel to remove excess oil.

  6. Place a spoonful of the marinated salmon on top.

  7. Garnish with black sesame seeds, spring onion and / or small piece of nori seaweed.
