Waffles



I love waffles so much, they are the perfect brunch or breakfast food, especially these crispy on the outside and soft on the inside ones!



I have tested so many waffle recipes and I must say, to get the best waffles, you do really need a waffles maker that is very deep and that spins around, but I don't have one so I had to test tons of recipes to still get a delicious waffle and here is the recipe :)


To make these waffles autumnal, I added some apples and brown sugar and to make the summer ones, I added on a summer fruit syrup, the recipe is here.



Ingredients

  • 80 g melted butter

  • 2 eggs, separated

  • 250 g plain flour

  • 1 teaspoon of vanilla extract

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon of salt

  • 5 cl milk

  • 25 cl water

  • 50 g caster sugar



Recipe

  1. Mix your egg yolks + milk + water + vanilla extract until combined.

  2. Sive in the flour + baking powder + baking soda and mix until combined.

  3. Whisk your egg whites with the salt and add in slowly the sugar bit by bit and whisk until stiff peaks.

  4. Fold your egg whites into the egg yolk mixture.

  5. Heat your waffle iron.

  6. Brush on some melted butter, make sure to get it everywhere, in all the little spaces.

  7. make sure your waffle iron is super hot before place a spoonful of batter on, bearing in mind the batter will spread, so don't put too much.

  8. Wait about 3-5 minutes until the waffles are golden.



To make sure they stay crispy, leave to cool on a wire rack or eat straight away!
